A pioneer in the world of coffee production, Wilton Benitez brings a lifetime of expertise and innovation to the craft of cultivating exotic, sought-after coffees. Drawing inspiration from fermentation techniques used in wine, beer, and cheese production, Wilton has mastered the art of controlling variables such as sugar content, pH levels, and fermentation duration to unlock the full potential of each coffee bean.
At the heart of Wilton’s approach are three key elements that define his coffee’s exquisite taste: a meticulously designed fermentation process, the use of specific microorganisms at each stage, and a unique soaking method where beans are treated with hot and cold water to seal their flavour. His work represents the perfect fusion of science and artistry, setting a new standard for extraordinary coffee.




Edinson Argote _ Quebraditas Coffee Farm
Edinson Argote is a passionate and ambitious coffee producer whose journey reflects a deep commitment to craftsmanship and innovation. His introduction to specialty coffee began at the age of 20, working at a local coffee buying station in Acevedo-Huila, where he discovered a fascination for cupping and sensory analysis. Eager to refine his skills, he pursued training and gained valuable experience working on some of the most innovative coffee farms in Colombia’s Cauca region, eventually leading quality and processing control efforts.
Driven by a vision to create something of his own, Edinson established Quebraditas Coffee Farm, where he and his family cultivate exotic coffee varieties like Gesha, Bourbon Sidra, Ombligon and Laurina. His work embodies a dedication to quality, progress, and family, blending tradition with modern techniques to produce coffees that stand out for their exceptional character and complexity.
Luz Ángela Rojas – Finca Chorro Alto
Luz Ángela Rojas grew up immersed in the rhythm of coffee farming, learning the value of hard work as she helped her father with the daily demands of their family farm. While her journey led her to pursue a career in healthcare, her roots in the coffee fields always called her back. With a background as a head nurse and experience in audit management, Luz Ángela brings a unique perspective to coffee cultivation, blending the principles of care and precision she developed in her professional life with her deep connection to the land.
Today, she leads a family project dedicated to reimagining their coffee legacy. Focusing on quality agronomic practices and innovation, Luz Ángela strives to produce exceptional coffees that reflect the natural beauty and richness of her farm. Her vision is to create coffees so exquisite that they captivate with simplicity, honouring tradition while transforming it into something extraordinary.




Jorge Mira – Finca El Jaragual
Jorge Mira, a forestry engineer with a passion for sustainability, leads the way at El Jaragual, a 150-hectare family-owned farm nestled in the northern Andes of Antioquia, Colombia. Drawing from his extensive experience in forestry, Jorge has cultivated a harmonious balance between agriculture and conservation, with much of the farm dedicated to native forest preservation and sustainable pine plantations. This thoughtful approach not only nurtures the surrounding ecosystem but also provides an ideal environment for growing exceptional coffee under the shade of native trees.
Under Jorge’s stewardship, El Jaragual has become a hub of innovation and tradition. From cultivating classic varieties like Castillo to experimenting with exotics like Pink Bourbon, Typica Mejorado, Sidra and Gesha, Jorge combines agronomic expertise with precise processing methods, such as extended fermentation, to enhance the coffee’s complexity. His dedication to both the land and the craft reflects a commitment to producing coffees that honour tradition while embracing thoughtful innovation.
